You can modify this recipe as you like. I am doing it fairly bland and boring because of GD diagnosis.
If I did not have GD, I would add maybe a bunch of cheese to this, hot sauce, more sour cream ranch on top etc and even put it in a tortilla.
Ingredients
- 1 cup chicken
- 1/2 cup pepper
- 2 cups kale
- 1 tsp paprika
- 4 tbsp Sour cream
- 1 ranch packet
Instructions
- Pre-cook one cup of chicken and cut into smaller pieces, I did cubes but slices are fine too, whatever you prefer
- Pre-cook peppers to your liking, I added paprika to them to give them an extra pizzaz
- Sautee kale in a skillet with oil or lard of your choice until fairly wilted, add peppers and chicken and stir
- Pre-cook brown rice ahead of time. I batch cook this to make it easier for myself. I used my Instant Pot Ultra which you can find here
- For the rice; I did 2 cups of brown rice and 2.5 cups of water on the Rice Setting, set to LOW pressure.
- Add sour cream and rice packet together and stir
- Once everything is set, assemble kale mixture on top of 1.5 cups of brown rice and add about 1.5 tbsp of ranch on top to taste
- Voila
